Popsicles are a summer stable, but they are usually filled with sugar and other additives. Stay cool and healthy by making these easy fruit popsicles with a healthy boost from beets.
Ingredients:
- 1 ½ cups of fresh strawberries
- ½ cup cooked and cooled beets
- ¾ cup apple juice
- 1 tsp lemon juice
Directions:
- Blend all ingredients together until smooth.
- Pour mixture into popsicle molds and insert popsicle sticks.
- Place in freezer for 3 to 4 hours, or until completely firm.
*Makes 5-6 popsicles.
